Is Austin ready for California burritos?
Troublemaker, a new bar-burrito-record shop concept in the space previously occupied by The Hightower on East Seventh Street, is named for a Willie Nelson album, but its cuisine will lean more West Coast than Tex-Mex.
The main menu item will be California burritos, which co-owner Chad Dolezal describes as "carne asada burritos with French fries instead of rice and beans." Options will include carnitas and pollo asada as well as a vegetarian option.
"I lived in San Diego and for awhile and I survived by eating them as often as possible," Dolezal said in an email of California-style burritos, which are sure to stand out in Austin's taco-focused food landscape.
Olivia Schnell, former bar manager for The Hightower, is staying on with Dolezal and co-owner Victor Farnsworth to run the bar program at Troublemaker.
They are also partnering with local record shop End Of An Ear to sell records and host Bring Your Own Vinyl nights.
Dan Healy and Andy Uhler, a Marketplace reporter and 10-year veteran of KUT, are also joining the leadership team at Troublemaker.
"We all love music and drinking when listening to music, and occasionally eating when drinking and listening to music, so it seemed like a perfect concept for us to all do together," Dolezal wrote in an email.
Troublemaker is slated to have a soft opening either at the end of October or in early November, with a grand opening scheduled for later in October.
