Austin-based Rosso & Flynn delivers fresh meat from Central Texas ranchers
When it comes to meat, it can be hard to break the Styrofoam cycle.
At many grocery stores, most meat — specifically, fresh cuts of chicken, beef and pork — is sold on a Styrofoam tray wrapped in plastic. It's an effective way to sell conventional and organic meat to everyday grocery shoppers, but as Americans have become more conscious about where their meat comes from, other butchery options have become available.
Some of you might buy meat from a buying cooperative or in the frozen section of the store. Some of you might hit up the farmers market and buy directly from the rancher. Some of you might have meat delivered via Farmhouse Delivery or another food delivery service.
Last year, an Austin company called Rosso & Flynn opened to offer another option for buying fresh meat. Founders Manuel Rosso and Lisa Flynn wanted to start a "modern butcher" that allowed customers to buy locally sourced fresh, never frozen meat online for delivery, but they also wanted to create a website and a community of customers who could share recipes and cooking techniques.
Earlier this week, they dropped off a sample bag for me to try some of the various kinds and cuts of meat they offer. Last night, I seared a flat iron in a hot cast iron skillet, and in today's livestream today on the Austin360 Facebook page, I'm going to cook the semi-boneless quail from Diamond H in Bandera that also arrived. I'll also be cooking Red Wattle pork chops and chicken thighs later this week.
The company offers delivery on Thursday, which is perfect for weekend cooking, and again on Sunday, which is good for people who do most of their cooking during the week. The flat iron steak is 10-12 ounces and costs $13.50, and a pound of 80/20 grass-fed beef is $5.50. A package of 1 1/2 pounds of chicken thighs cost $13, a whole, pasture-raised chicken costs $21, and a pound of chicken breasts costs $10. You can also buy the meat in bundles or larger quantities. The delivery fee is $9.99, but free for orders over $25.
