Austin’s largest hotel gets closer to opening with hiring of beverage director
Fairmont Austin, the 37-story, 1,048-room property that has sprouted along the Austin skyline at Red River and East Cesar Chavez streets, now has a beverage manager who will oversee the drinks programs at the hotel’s whopping five restaurants and bars.
That’s a very good sign the slightly delayed Fairmont is nearing an official opening —it can’t run without good booze, right? Up for the task of keeping Fairmont well-stocked with cocktails and other drinks is Andrew Grenz, previously the beverage director and general manager of Kuneho, the restaurant of award-winning chef Paul Qui that closed late last year.
During his time at Kuneho, he was a 2017 finalist in the Official Drink of Austin competition for his clarified Horchata Milk Punch.
But he’s never had so many different spots to manage at one time. Fairmont Austin’s mix of bars and restaurants includes Fulton, the lobby bar; Rules & Regs, a cocktail-focused hangout on the seventh floor, near the pool deck; Garrison, a steak-heavy grill; and Revue, a dining hall with global cuisine. There will also be coffee shop Good Things.
Grenz hopes that as a whole, Fairmont Austin will become “a food and beverage hub of downtown,” according to a press release announcing his hiring.
“The vision is to create a feeling of individuality between each distinctive bar program, while tying everything into a cohesive story,” he said in the release.
Full cocktail lists and beverage offerings will be shared on each bar and restaurant’s website leading up to the opening of the hotel, which will take the JW Marriott’s place as Austin’s largest. Overall, you should expect thoughtful but not overly complicated drinks like the tiki-esque Pancho & Lefty, featuring Mount Gay Black Barrel Rum, Bacardi Rum, lime juice, Cointreau, orgeat and banana coconut cream (pictured above).
