Slab Barbecue opened Monday in the space of the former Texas Rib Kings at 9012 Research Blvd. The restaurant was spawned from the trailer Mark Avalos started in 2006. The operation originated as Sugar Shack Barbecue, before rebranding as Slab Barbecue in 2012, when it debuted at South Bites. The restaurant specializes in barbecue sandwiches (brisket, pulled pork, sausage, etc.) and also serves St. Louis style pork ribs, barbecue nachos, and South Carolina twist on a brisket hash with veggies and sauce.

“We’re trying to break away from the two-meat and three-meat plate thing, because so many people are already doing it,” Avalo said

Slab is open daily from 11 a.m. to 10 p.m. They have a roving food truck (location updates on Twitter) and a trailer that will open near the University of Texas campus at 2330 San Antonio St. in a couple of weeks.
