Sushi restaurant and Japanese grill opens downtown next week
The development of the West End will receive an infusion of flavor and style next week when sushi and robata restaurant TenTen opens Monday in the massive building at 501 W. Sixth St. that was long home to Miller Blueprint.
Executive chef Jonathan Oh, who has worked in New York City under chefs Jean Georges and Marcus Samuelsson, and executive sushi chef and Hokkaido native Yasuo Fujimori, a longtime veteran of sushi restaurants including Sushi Samba and Novikov Miami, will lead the kitchen that will focus on sushi, Japanese-style grilled meats and vegetables. The two chefs are joined by executive sous chef Harvard Aninya, whose resume includes restaurant Gwendolyn in San Antonio and Uni Sashimi in Boston
Sushi offerings include maki preparations like spicy tuna with serrano; hamachi with jalapeño and cilantro; and king crab with Fuji apple and avocado, and nigiri options like a5 wagyu with sweet soy and scallion; fatty salmon with tomato and ikura; and hamachi belly with jalapeño and chili ponzu. The charcoal robata grill will be used to prepare dishes ranging from mushrooms in wafu dressing to bronzino with ginger and and pork ribs in teriyaki with pecan and chili.
The restaurant will be operated by Jack Zimmermann, founder of Nova Hospitality, which recently opened Eastern Mediterranean lounge/restaurant Devil May Care across the street, and Philippe Moullet of Zuma/Roka Restaurant Group, which operates restaurants around the world.
“We wanted to be in Austin because the city is so exciting, it’s really alive,” Moullet said.
The two men who met while working as hospitality consultants while working in Dubai have partnered with Austinites Pat and Sara Lee, husband-and-wife entrepreneurs and founders of Phonatic, who have worked in the Austin restaurant scene since 2006.
Las Vegas-based designer Lisa Escobar—who was a finalist for HGTV’s Fresh Faces of Design in 2015— designed the sleek urban space.
