New Jester King Brewery executive chef introduces Supper Club
Talented chef Damien Brockway, who rose to prominence at Counter 357 after stints at Uchiko andQui, joined the team at Jester King Brewery last year as the award-winning brewery’s executive chef.
Brockway, who left Counter 357 in 2017 before a brief stint at the Line hotel, has been using farm, fermented and foraged ingredients to create a menu that includes dishes like housemade charcuterie and cheese boards ($20), corned beef tongue with radish slaw and mustard blossom ($10), pork cracklins ($6) and seeded pretzel with beer cheese ($8). The menu at the restaurant, which supplanted the former Stanley’s Farmhouse Pizza, also includes a roster of 12-inch wood-fired pizzas made with naturally fermented local grains. Jester King will expand its culinary offerings this week when it rolls out a new monthly supper club. The series led by Brockway will “express our team's creativity while being rooted in our philosophy of creating food and drink connected to a time, place and people.,” according to Jester King’s website. “It will also be a vehicle to explore the fun and excitement of pairings and a chance to host some special guest collaborators from the food and drink world from time to time.”
The local vegetable-and-herb-centric menu for the Thursday night beer-paired dinner, which will seat only 32 guests, can be found below. Tickets, which cost $95 and include beer pairings, can be purchased online.
The Jester King kitchen is open Thursday and Friday from 4 to 9 p.m., noon to 9 p.m. on Saturday and noon to 8 p.m. on Sunday.
