First Celis beer launches at the Draught House

Last Summer, Christine Celis, daughter of renowned Belgian brewer Pierre Celis, announced she was returning to Austin to bring her father’s beer back to the market.

While the brewery is still in the works, Celis says she’ll be working with brewers around the world to create “gypsy” collaborations. The first beer in the series is a Belgian IPA, brewed at Adelbert’s Brewery.

In the press release, Celis’ Consulting CMO, Cindy Montgomery said, “The idea for the Gypsy series was born from a real world Gypsy brewing tradition. In olden times, brewers would travel around and experiment with other enthusiasts. The beers they created together were typically produced for their personal enjoyment, and often brewed only once or twice. So in the spirit of collaboration and experimentation, and in keeping with tradition, each “Gypsy” in Christine’s collaboration series will be a limited edition product that is literally here today and gone tomorrow. My advice is to enjoy them while you can.”

Celis says the first recipe was developed with the help of Texas’ first female brewmaster, Kim Clarke.

“Kim was also the only female brewer in Texas when she brewed with my Father at the Celis Brewery in Austin throughout the 1990’s. It seemed only fitting that she should be involved in the creation of our Gypsy brand, which will be the first product released by my new company.”

Celis calls the beer a “remarkable medium bodied beer with noticeable Belgian malt character. It’s a deep golden colored IPA crafted from Belgian yeast and features pronounced hops on the nose and distinct citrus notes. We’re very happy with the initial results.“

Tonight, the first beer debuts at the Draught House. The event will be one of eight where people can come to taste the beer and meet the brewers. Check out the full list of events below, each one takes place from 6 to 9 p.m.:
