Having helped create some of the city’s best pastrami, brisket and deli sandwiches with the Mum Foods brand which she co-founded, Mattison Bills has branched out on her own.
Bills has created Three Six General, a company that sells a collection of condiments and cured meats, sourcing from local ranches such as Peaceful Pork and Augustus Ranch.
Three Six General is initially selling jowl bacon, ham, various lamb and pork sausages in sheep's casing, liver pate and smoked pork rillettes at the Mueller Farmers Market (Sundays at 4209 Airport Blvd.) and Lakeline Farmers Market in Cedar Park (Saturdays at 11200 Lakeline Mall Drive).
To celebrate the new product line, Bills is hosting a lamb roast pop-up dinner on Friday at the Austin Winery (440 East Saint Elmo Road). The dinner will feature duck liver mousse, falafel, garam masala spiced lamb, pistachio mousse and more. The dinner, which starts at 7 p.m. and costs $60, coincides with the winery’s pre-release of an all-natural carbonic-macerated Grenache.
Beginning February 20, Three Six General will also produce the entire food menu at Roughhouse Brewing in Wimberley, and the brand’s liver pate and smoked pork rillettes are now available at Hill Country wineries Crowson Wines and Southold Farm + Cellar, in addition to the Austin Winery.
