Stiles Switch BBQ & Brew celebrates the holiday season each year with one of the more playful and delicious runs of seasonal specials. The North Austin restaurant’s 12 Days of Smoked Meats event allows the restaurant to flex its creativity on the smoker, with the restaurant serving a different smoked meat special each day for 12 consecutive days.
This year’s run started Tuesday and extends to December 22. The series also features collaborations with some of the city’s biggest chefs, with Lenoir’s Todd Duplechan (who also had a hand in The Switch) cooking gumbo; Olamaie’s Michael Fojtasek making a chopped beef and sausage sandwich on an Olamaie biscuit; and Comedor’s Philip Speer tapping in his restaurant’s Mexican traditions for a pulled pork torta with chorizo verde. DAY 3: THRS, DEC. 12th - Smoked Chicken Fried Beef Rib with Cream Gravy & Cheesy Bacon Tater Tot Casserole.
DAY 4: FRI, DEC. 13th - Smoked Duck Confit with Rice Congee, Soft Boiled Egg Marinated in Soy Sauce & Rice Wine, Pickled Ginger, & Diced Scallion.
DAY 5: SAT, DEC 14th - Brisket Meatloaf with Tamale Whipped Mashed Potatoes.
DAY 6: SUN, DEC. 15th - Smoked Sausage, Brisket, & Chicken Gumbo served over Potato Salad with Dunker’s Spicy Crackers. Collaboration with Guest Chef Todd Duplechan, Lenoir

DAY 7: TUES., DEC. 17th - Smoked Tomahawk Ribeye served with Loaded Baked Potato. STILES SWITCH BBQ 8 YEAR ANNIVERSARY!
DAY 8: WED, DEC. 18th - Smoked Prime Rib with Creamed Spinach & House Horseradish Cream Sauce.
DAY 9 THRS, DEC. 19th - Ola-Mailman Sandwich - Olamaie Biscuit, Chopped Beef, Spicy Link, Cheddar, Yellow Onion, Sorghum/Mustard BBQ Sauce. Served with buttermilk & Tabasco powdered potato chips. Collaboration with Guest Chef Michael Fojtasek, Olamaie.
DAY 10: FRI, DEC. 20th - Pulled Pork Torta with Refried Beans, Tater Tots, Chorizo Verde, Oaxacan Queso and Guacamole. Collaboration with Guest Chef Philip Speer, Comedor
DAY 11: SAT, DEC. 21st - Texas Wagyu Beef Breaded & Fried, Topped with Sausage Sawmill Gravy, Buttered Mashed Potatoes & Texas Toast.
DAY 12: SUN, DEC. 22nd - Smoked Brisket or Pork Tamale Plate. (2 Tamales Served with Spanish Rice, Brisket Pinto Beans, & Chile Con Queso) * Please note Tamales will not be sold by the dozen. Sold by the plate only.
