It makes sense that we would devote an entire month to celebrating rum, and also that the month in question would be August. What else is there to do during these sweltering 31 days than to sip Tiki cocktails out of wonderfully ludicrous mugs?

One local restaurant wants to remind us, however, that the incredibly diverse spirit of rum is not entirely defined by its use in Tiki cocktails. During August's National Rum Month, Pitchfork Pretty has more than 40 rums from more than 20 countries available — until Sept. 1, that is, when the bar program goes back to business as usual. (At that point, we'll be asking, "But why is the rum gone?")

“There are so many different ways to showcase rum, which is why we’re dedicating a full month to it,” beverage director Thomas De La Garza said in a news release. “Most people are familiar with rum in Tiki cocktails, but we want to demonstrate how multifaceted rum is. The variety of styles we’ve selected for this program will provide something for every palate."

For Rum Month, Pitchfork Pretty will have both rum flights and rum cocktails. One flight showcases the rums in a range of ages; the other highlights off-the-wall rums that don't fall cleanly in categories such as light, aged, dark and overproof. Each one will offer four 1-ounce pours for $25.

Additionally, there will be a total of 12 rum cocktails during Rum Month — six during the first half of the month that will rotate to another six during the final two weeks. Here's what the East Austin restaurant is starting with. Notice that a different rum is featured each time.  

Clear Eyes, Full Heart: Havana Club Blanco, Ford’s Gin, Creole shrub, grapefruit

Pineapple Express: Plantation Pineapple, lime, coconut, allspice

The Clouseau: Cana Brava 3yr, vanilla, raspberry, coconut

Corn & Molasses: Zaya Reserva, velvet falernum, Angostura bitters

Steal My Sunshine: Batavia Arrack, Chairman’s Spiced, lemon, cinnamon, ginger

Flower Power: Brugal 1888, cava, chamomile

Rum Month comes on the heels of Pitchfork Pretty's decision to cancel brunch and extend Korean barbecue to Sundays. The first Sunday night banchan and barbecue takes place Aug. 18.
