Actually, let’s sweeten the deal even further. Starting today, you'll be enjoying one drink in particular at some of the 101 bars and restaurants around Austin participating in this year's Negroni Week — the beautifully complex, scarlet-hued classic gin cocktail called the Negroni. And then a portion of your purchase will go toward a worthy cause.

The Negroni Week fundraiser, started in 2013 by Imbibe magazine and Campari (one of three main ingredients in Negronis), doubles as both a boozy celebration of one of the world’s most beloved classic cocktails and a charity event that raises money for the nonprofit of each participating bar’s choice. The seventh annual Negroni Week, an international event, runs from June 24-30 this year.

Why Negronis, you might be wondering? Created in Italy, the cocktail is disarmingly simple — one part gin, one part sweet vermouth and one part Campari, stirred and served over ice with an orange twist — but the multi-layered balance between bitter and sweet is a combination that has been bewitching drinkers for years. It’s also an easy drink for bartenders to create with their own tweaks and variations.

It's Italian Cucina, 1500 S. Lamar Blvd. #110.

Once a small wine shop in East Austin, It's Italian has grown into a charming full-service restaurant in South Austin. Negronis are on offer on the cocktail menu year-round, but owner Al Fini wanted to create a coffee-filled twist this week with the Negroni Affair, featuring equal parts Still Austin Gin, Carpano Antica Sweet Vermouth, Campari and a touch of freshly brewed espresso. The drink is also infused with smoke. Have we mentioned how divine coffee and Campari are together? So is this cocktail.

The Roosevelt Room, 307 E. Fifth St.

For one of the most ambitious Negroni Week menus you'll see, head to this downtown cocktail bar so focused on perfection that the two co-owners, Justin Lavenue and Dennis Gobis, spearheaded a full revamp of its 80-drink menu last fall. This year, the featured Negronis are inspired by the directions of the compass. 


North, with Scandinavian, Icelandic and Canadian ingredients: The Hello Darkness, My Old Friend has aquavit, Becherovka, Cap Corse blanc, lavender bitters, salt tincture, orange oils, black skeleton leaf and caraway flowers
South, with South American, Australian, South African and New Zealand ingredients: The Pantera Negra has Novo Fogo silver cachaça, Mosto Verde pisco, spiced malbec, Campari, Fernet-Vallet, mole bitters, salt tincture and lemon peel
East, with Asian ingredients: The Five Point Palm Exploding Heart Technique has Takara rice shochu, Cocchi Americano, Braulio amaro, passion fruit, grapefruit juice, yuzu, sesame oil, Peychaud's bitters and Chinese five-spice
West, with Texas-inspired ingredients: The Dust in the Wind has Casa Noble Joven Single Barrel Tequila, St. George Spiced Pear liqueur, Dolin Blanc vermouth, Salers Aperitif, Gran Classico bitter liqueur, salt tincture, bronze fennel fronds and mezcal and sotol mist

Uncle Nicky's Italian Specialties, 4222 Duval St.

The fairly new cafe from the owners of Nickel City, Via 313 Pizza and Juniper — which are also participating in Negroni Week — is going all out with five Negroni riffs starting today (when there will be a kick-off party from 3 to 6 p.m.). Specialty Negronis include the Negroni Frappe with Waterloo No. 9, Campari, Martini Rubino Vermouth and fluffy OJ and the Mezcaroni with Sombra Mezcal, Campari, Martini Rubino Vermouth and orange bitters.

Peche, 208 W. Fourth St.

Austin's first absinthe bar loves what gin, Campari and sweet vermouth can do together as much as anyone else. You can get the classic Negroni, which is always on the main menu, but Peche's chalkboard specials this week include four Negroni variations such as the Strawberry Tequila Negroni with strawberry-infused Dobel Diamante Tequila, Aperol and Cocchi Americano and the Still Austin Boulevardier with Still Austin Bourbon Peche Barrel, Carpano Antica, Meletti, Cynar and chocolate bitters.

Home Slice Pizza, 501 E. 53rd St.

The newest location of Home Slice was an exciting addition to the North Loop neighborhood last year, not least because of its full bar. For Negroni Week, the North Loop restaurant will offer its draft Negroni Danza, made with Campari, Aviation Gin, and Del Professore Vermouth Rosso, for $8.

Whisler's, 1816 E. Sixth St.

With one of the best mezcal bars in town attached to Whisler's roughly 100-year-old building, you can bet one of the Negroni Week variations here has the smoky Mexican spirit in it. One of three Negroni offerings, including the classic, the Oaxacan Fire has mezcal, Campari, Cocchi Torino, Cynar and an orange slice garnish that was dipped in chapulines (grasshopper salt, that is.)

Revelry on the Boulevard, 6215 N. Lamar Blvd.

The new sister restaurant to Revelry on East Sixth Street, the second location features two covered patios, a family-friendly atmosphere and a 50-foot bar behind which you can bet a whole lot of Negronis will be made this week. Revelry will be featuring three, including the Phony Negroni with Ford's Gin, Suze and Lillet Blanc for $12 and the Shhh-groni with El Silencio Mezcal, Aperol and Carpano Antica for $13. The original Revelry location is also participating in Negroni Week.

Juliet Italian Kitchen, 1500 Barton Springs Rd.

A frozen Negroni, anyone? The Italian restaurant, which boasts a charming covered patio you might not be able to stay away from even at summer's zenith, offers frosé (frozen rosé) and other frozen options to help diners beat the heat. But during Negroni Week, the similarly pretty-in-pink frozen Negroni is going to be our salvation. Juliet will also highlight its house Negroni and a Negroni Sour through June 30.

The Cavalier, 2400 Webberville Rd. Ste. A.

This casual neighborhood bar in East Austin serves up three Negroni variations this week. These include the Silencioni with El Silencio Mezcal, Violet Crown Elderflower Liqueur, Yzaguirre Vermouth Blanco and Campari for $12 and the Boulevardier with Wild Turkey Rare Breed Bourbon, Dolin sweet vermouth and Campari, also $12. (The Boulevardier is a recognized classic twist on the Negroni, swapping out the gin for bourbon.)

Mohawk Austin, 912 Red River St.

How about sipping a fancy cocktail while catching a live music show? Well, let's not get that fancy. For Negroni Week, the Mohawk is pouring out a frozen Negroni with an additional twist — it'll have a blood orange shrub that will add a nice tart, citrusy punch for your taste buds to play with.

Il Brutto, 1601 E. Sixth St.

The pan-Italian restaurant in the heart of East Sixth takes its name (meaning "the ugly one") from Italian director Sergio Leone's spaghetti western "The Good, The Bad, and The Ugly," starring Clint Eastwood. During Negroni Week, the names of each of the featured cocktails are inspired by that and other Eastwood films, such as Pale Rider with Bulldog Gin, Luxardo Bitter Bianco and Italicus and the Man With No Name with Vida Mezcal, Cynar, Cocchi Americano and orange bitters.
