Tabatha Conarko has been in the olive oil business for more than a decade.
With her late husband, Jeff, Conarko co-founded Con' Olio Oils & Vinegars, which sells the largest selection of freshly pressed olive oils and vinegars in the area. They started with a store in the Arborteum and then added several locations around the city.
Jeff Conarko died in 2016, but Tabatha has carried on the business, and this month, she's opening the largest store yet.
Late last month, Conarko closed the downtown location in order to open a flagship store at the Gateway at Falconhead in Bee Cave, 3500 FM 620 South. The new store officially opens on Friday, and they'll host a grand opening and 10th anniversary party all day on April 13, with small bites and wine from 3 to 5 p.m.
Con' Olio's location in the nearby Shops at the Galleria will also close as they consolidate into the larger, 1,650-square-foot store that also includes a demo kitchen with seating for 12, a covered outdoor patio and a selection of biodynamic wines. Conarkso says she plans to have cooking classes in the new space, which doubles as the center for the company's online sales.
At both the new Bee Cave store and the original Arboretum store, Con' Olio will continue to host its popular olive oil 101 classes and kids' culinary camps, as well as a new Mediterranean cooking class series with natural foods chef Rachel Zierzow. Store hours at the new location will be Monday through Saturday 10 a.m. to 6 p.m. and Sunday from 11 a.m. to 5 p.m.
