Refined southern restaurant and Austin360 Dining Guide Top 5 staple Olamaie will soon have some new flavors coming out of the kitchen at the end of meals.

The restaurant owned by chef Michael Fojtasek announced today that it has hired Jules Stoddart to serve as pastry chef. Stoddart joins the Olamaie team after leaving her post as executive pastry chef with Parkside Projects (Olive & June, Parkside, Backspace). The graduate of the Art Institute of Chicago’s baking and pastry program arrived in Austin to work as pastry sous chef at the South Congress Hotel under chef Amanda Rockman, for whom she worked at Nico Osteria in Chicago. Stoddart will be in charge of the dessert menu, so, don’t worry, the biscuits aren’t changing.

A release says Stoddart will create “desserts based on childhood favorites and rich Southern traditions.”

“Southern desserts are rich in history and deeply rooted in tradition, and I am looking forward to sharing my vision of these,” Stoddart said.
