Aaron Franklin's next book on steak doesn't come out until next year, but Texas Monthly has an early look into the book and what readers can expect from Franklin's second book with Jordan Mackay.

They take a Modernist Cuisine-style dive into steaks, looking into the science of the different salting techniques and why dry-aging affects flavor (and how to do it at home).

Mackay already has a James Beard Award for his 2011 book, "Secrets of the Sommeliers," and Franklin already has a James Beard Chef Award for his restaurant, so if the book does well next year, it could mean a second Beard Award for both.

In other local cookbook news, Jessica Dupuy's next cookbook with Southern Living will be called "United Tastes of the South," and it comes out next month. In 2016, we published her recipes for King Ranch chicken, chicken-fried steak and Texas sheet cake, which were part of the book that inspired this one that is called "United Tastes of Texas."
