Actually, let’s sweeten the deal even further. Starting today, you won’t be enjoying just any drink at the more than 100 Austin bars and restaurants participating in this year’s Negroni Week — you’ll be relishing the silky, scarlet-hued classic gin cocktail called the Negroni. And then a portion of your purchase will go toward a worthy cause.

The Negroni Week fundraiser, started in 2013 by Imbibe magazine and Campari (one of the central ingredients in Negronis), doubles as both a boozy celebration of one of the world’s best classic cocktails and a charity event that raises money for the nonprofit of each participating bar’s choice. The sixth annual Negroni Week, happening around the world, runs from June 4-10 this year.

But why Negronis? Created in Italy, the cocktail is disarmingly simple — one part gin, one part sweet vermouth and one part Campari, stirred and served over ice with an orange twist — but its botanical bite from the gin, sweet and spicy tug-of-war from the vermouth and final bitter punch from the Campari has been bewitching drinkers for years. It’s a boozy masterpiece, as well as an easy cocktail for bartenders to make their own with creative tweaks and variations.

Juliet Italian Kitchen, 1500 Barton Springs Rd.

Offering one of the best Aperol Spritzes in town, Juliet has mastered how to make quintessential Italian drinks — the Negroni chief among them. The Negroni Week menu from the South Austin stunner includes a classic Negroni, Rosita Negroni, White Negroni, Negroni Sour and a Frozen Negroni. They’re all going to be good bets, but that frozen version is sure to hit the spot during these already steamy summer days.

Proceeds will benefit the Wild Foundation.

Holy Roller, 509 Rio Grande St.

The edgy downtown diner focused on delivering brunch all day, every day is serving up a veritable rainbow of Negronis this week, each at $10. The ruby-colored classic Negroni features Woody Creek Gin, Campari and Cocchi Torino, but if you’re feeling a little adventurous, there’s also the White Negroni (Ford’s Gin, Suze and Cocchi Americano), the Pink Negroni (Oxley Gin, Aperol and Cocchi Rosa) and the Black Negroni (Aviation Gin, Jagermeister and Punt e Mes). 

Proceeds will benefit Trigger’s Toys.

Péché, 208 W. Fourth St.

Downtown Austin’s French-focused gastropub isn’t suddenly offering fast-food burgers, but you might think so with the name of this cheeky Negroni Week offering, the Whatanegroni. There isn’t even any ketchup involved; instead, it’s made with Ford’s Gin, Campari, sweet vermouth, fresh watermelon and a salt tincture.

Proceeds benefit the New Orleans Musicians Clinic.

Nickel City, 1133 E. Eleventh St.

Fresh off being named one of the best bars in America in the prestigious annual list from Esquire, this neighborhood bar in East Austin will have four Negroni options this week. In addition to a classic Negroni, Nickel City is featuring a Mezcal Negroni, an Aged Negroni with Treaty Oak Distiling’s Antique Gin, and a Negroni Week Boilermaker with Montucky Cold Snack and a mini-Negroni. Boilermakers are a specialty here, so kick off with that one.

Cosmic Coffee + Beer Garden, 121 Pickle Rd.

It was gratifying to hear that the fairly new coffee shop and bar off South Congress Avenue is a participant in Negroni Week, as Cosmic already had one of Austin’s best Negroni riffs on its menu. The AM Negroni swaps the usual gin for their house-made cold brew coffee. That might sound like a strange combination, but it’s actually a brilliant fusion of Cosmic’s two main beverage focuses. (Or, if you find gin essential, you can order the PM Negroni instead.)

The Roosevelt Room, 307 W. Fifth St. 

It might seem rather ambitious to have a total of six Negronis available this week, all with a complex recipe of ingredients, but regulars to the sophisticated downtown cocktail bar would expect nothing less. A highlight this year is what the Roosevelt Room is calling the Four Seasons of the Negroni — that is, a recipe tailored to each of the four seasons. Summer’s version (Campari, Caperitif, watermelon juice, Yuzu, Topo Chico and a little something they’re calling patriotism) sounds just about perfect.

Contigo, 2027 Anchor Ln.

This East Austin restaurant took a barrel-sized chance for Negroni Week this year with the Barrel-Aged Negroni, which has been aging in a small oak cast since early April. There’s no telling what the drink has morphed into, but with all the classic ingredients (gin, Campari and sweet vermouth), it’ll be an interesting experiment in how the influence of wood can transform booze.

Drink.Well, 207 E. 53rd St.

One of the most reliable places in town for wild riffs on classic cocktails, North Loop bar Drink.Well delivers again with a fun, inventive Negroni Week menu. Order the classic Negroni for $6 during happy hour and then linger for the alternatives, such as the lower-alcohol Negroni Spritz (strawberry and melon-infused Lillet Rosé, Campari and prosecco), $10. The $12 Exile in Argyll (Laphroaig 10 Year Scotch, Old Granddad Bourbon, Campari, Lustau Pedro Ximenez Sherry and sea salt) is your nightcap.

Oasthouse Kitchen + Bar, 8300 FM 620.

How about a Negroni flight? Head Bartender Zach Sasser has come up with a fun way for you to try multiple cocktails in one sitting at this Northwest Austin restaurant. Oasthouse will have the classic Negroni (Ford’s Gin, Campari and Dansk Mjod Viking Blod Mead), the Dark Boulevardier (Basil Hayden Dark Rye Whiskey, Campari and Carpano Antica) and the Negroni 47 (Monkey 47 Schwarzwald Dry Gin, Campari and Carpano Antica) all featured.
