Following a busy first few days of business two weekends ago during the Red Poppy Festival in Georgetown, the John Mueller-helmed Black Box Barbecue is now open on weekends from 10:30 a.m. until sold out. The trailer at 201 E. Ninth St. in downtown Georgetown will continue with those hours until final permits come in, according to Mueller.
The mercurial pitmaster’s latest entry on the scene is backed by owners and longtime Mueller friends Gary Brown and Justin Bohls. The trailer will serve Mueller’s traditional menu of brisket, beef ribs, pork ribs, pulled pork, chicken and his various side dishes. The trailer is intended to be just the first step in Mueller’s reintroduction to the Central Texas market. The partners plan to open Black Box barbecue on the adjacent property, with construction to begin soon.
