The former "Top Chef" contestant, whose national fame grew as a judge on ABC’s show "The Taste," has created a menu featuring "new American classic cuisine," including dishes such as chicken and waffles, ribeye with cognac and horseradish, fingerling potatoes with Frank’s Hot Sauce beurre blanc, cocktails, wine and craft beer. Opening Friday: Umami Mia Pizzeria, a restaurant from industry veterans Mark Turner, Rick Engel (Austin Java and Lil’ Woodrows) and Adam Weisberg (Zen) at 1500 Barton Springs Road, the former Romeo’s home. Chef George Thomas, formerly of Paggi House and Soleil, is letting umami — a savory "fifth taste" that is prevalent in roasted peppers, bacon, cheese, mushrooms and even anchovies — be his guide as he creates everything from pizzas and pastas to salads and sandwiches.
