Naturally leavened, slow-fermented (not to mention all-organic) bread can be hard to come by, but an Austin-based baker has started a bread subscription service to sell high-end loaves that take as long as four days to make.

Miche Bread founder Sandeep Gyawali first made a name for himself (and his bread) at La Boulangerie in New York, and after living in Austin for a few years now, he’s now selling his sourdough boules and other specialty breads through a subscription model. He starts with whole grains, including whole wheat, whole rye and whole spelt, that he then mills into flour and uses to make mostly sourdough boules but sometimes other specialty loaves, like a rye and coriander bread that on some weeks will replace the sourdough.

Customers pay $100 for 10 loaves, which can be picked up from 2 to 8 p.m. on Saturdays at Travis Heights Beverage World, next to Whip In, at 1948 S. Interstate 35.
