Restaurant Profile

Named after the legendary trail that longhorns followed from the Gulf Coast to market. The certified Angus steaks -- 7-ounce filet and 12-ounce ribeye -- were tasty and tender, as was the cheesesteak sandwich. Sides and salads, including the baked sweet potato with cinnamon butter, excelled. Forks up. Moderate.

It's not everywhere that a history lesson comes with dinner.

At Saltgrass Steak House, though, diners can walk away with a little knowledge about Texas' famed cattle industry.

In the 1800s, when longhorns roamed free and ranches were prospering in the Lone Star State, the cattle were driven each winter to the Gulf Coast, where they grazed on salt grass. (Ahh, now you see the connection.)

When they were herded to market, they followed what became known as the Salt Grass Trail.

Synonymous with good beef then, Saltgrass represents good beef now.

The Texas-based chain, using certified Angus beef, delivered tender steaks one recent night at its location on the northern edge of Round Rock.

The thick, 7-ounce, center-cut filet ($18.99) was juicy, tender and cooked to a perfect medium-rare, while the thinner, 12-ounce ribeye ($17.99) was moist and flavorful, although it was cooked to the medium stage, rather than medium rare as ordered.

The cheesesteak sandwich ($9.99), made with shaved strip steak, grilled onions and poblano peppers on a French roll with cheese and chipotle mayonnaise, was tasty but a little too heavy on the salt.

The salads ¿ Caesar and dinner ¿ and the sides (all complimentary with entrees and sandwiches) ¿ french-fried onions, steak fries and a baked sweet potato with cinnamon butter ¿ were nicely done.

The tall, creamy cheesecake ($4.99) may be considered the "best in Texas" by some, as our server said, but these three diners would have preferred it without the warm white chocolate sauce.

Overall, in decor, ambience and name, the restaurant lives up to its slogan: "Texas to the Bone."

I go to Saltgrass as much as I can. The price is kinda high or i would go there 3x a week. My fav would have to be the Center Cut fillet. It is the leanest steak on the menu. I get my steaks cooked to MR to Med but my friend (god help her...) gets her steaks welldone and she got a fillet as well and she could cut it with a fork. All the steaks are topped with a garlic butter that compliments them greatly. The have great flash fried green beans. The veggie portions arent huge but with the dinner salad or soup that you get with bread there is not much to complain about. Now, the baked pot soup was sooo good that I have been there before and only ordered a bowl for my meal. Now to end off you meal you have to try the two fork cheese cake. It is HUGE! Perfect to share! I havent even said anything about the service! It seems that everybody that works at Saltgrass really loves that job. They are very knowledgeable about what they are giving u. And from what I have learned everything is made in house daily. So, if you are looking for a great steak or chicken, even seafood im sending you here!

Not for a Party of 8

We had a small party of 8 at the SaltGrass......NEVER AGAIN...... When you have an 8 person party the waiters know the gratuity is an 18% given no matter how bad the service is!!!! And believe me the service was atrocious. First the young people there couldn't understand the party was for 8.... they tried to seat us with 5, next try was for 6 then finally a half hour later we finally found someone who could count to 8. Once seated and the menus handed out....another interminable long wait for a person to serve us drinks. There were about 3 empty tables around us at the time we sat down....while we were waiting for service people were seated at those tables, received their drinks AND their food before the waiter even took our order!!!! Then it took another life time to get the food.....evidentially my shrimp and chicken had gotten cold waiting for the rest of the meals to be made because they saw fit to nuke the meal back to warm....nuking shrimp and chicken turns the meat into rubber!!!!! I had asked for some ketchup to try to disquise the foul chicken but the waiter took so long bringing it to me... I didn't receive it until we were ready to pay for the food. Disgusting horrible place to pop over $200 and 3 hours. If you have a holiday crowd....do yourself a favor and find someplace else to eat.....these people in Round Rock, Texas are pathetic!!!!!

Great food and fast

We went to Saltgrass today, Sunday, about 1pm. It was crowded but no waiting for seating. The service was fantastic and friendly. We each chose the Chicken Fried steak with different side dishes and it was wonderful. Eating out on Sunday can be a bad experience but not at Saltgrass. We will return as we both mentioned that the large salads looks wonderful.
