How about some brisket curry with your Old Fashioned?
If you’re going to spend a day drinking whiskey cocktails, you’ll need some food — and the upcoming Still Austin Whiskey Co., a South Austin distillery that will open its doors for the first time on Sept. 23, has guaranteed you won’t need to leave the tasting room to get a bite.
A new food truck called Puli-Ra is setting up shop in the courtyard outside the distillery and will serve up Indian food with Texas flair, such as roti tacos filled with brisket curry. Some of the food items, like the brisket curry, have been made in some way with the whiskey from nearby Still.
Puli-Ra is the vision of Chef Deepa Shridhar, who Austinites might know from her pop-up dinner series Anjore and delivery service and farmers’ market stand Chaiwalla. Like Anjore and Chaiwalla, Puli-Ra will offer her signature blend of her two most beloved cuisines, Indian and Texan.
Still Austin Whiskey co-owner Chris Seals is excited for the food truck to open in Still’s backyard, and he expects that locals visiting the distillery will be, too.
“It’s all locally sourced with a little touch of Indian spice. It’s really spectacular,” he said. “Those ladies are amazing. One of the things they did was ask us for some of our whiskey, for some of our grains, and they use those things in some of the things they made. It surprised us. They kind of won our hearts that way.”
Because Still Austin Whiskey also sources locally — the main product, New Make Whiskey, is distilled primarily from Hondo white corn grown near San Antonio — Seals sees Puli-Ra as a perfect match.
“It’s fun to see what you’re making is going into something someone else is making. And you can have them both at one place,” he said.
