Adam Bryan comments on leaving Bar Congress

I reached out to Adam Bryan last week, after the news that he was leaving Bar Congress was announced, to see if he had any inclination to share his future plans.

While various rumors circulate around the internet, Bryan isn’t quite ready to share the details on his new venture just yet, but he did have this to say:

Since arriving in Austin 4 years ago, I have remained dedicated to the elevation of the drinking experience. I have worked alongside the best Bar Craftsmen in Texas, (D. Allen, B.Norris, B. Dressel, J. Loving, B. Craven) in addition to some savvy restauranteurs (Larry McGuire, Scott Walker, Mickie Spencer,) and together we have established creative new standards in cocktail service while successfully closing the gap between fine dining and fine drinking in Austin Texas.

But in doing so we have unintentionally created an entirely new gap that is growing faster than St. Germain’s stock prices. At one end, PBR Tall Boys at Liberty, and (quite literally) at the other end Duck Fat Sazeracs at Haddington’s. I can be found at both on a given day soaking up what they do best, respectively, but the distance between the two philosophies couldn’t be more clear.

See you round the neighborhood in 2012.
